Don’t Throw Away Watermelon Rinds Until You See This! (2 of 3)

Try Different Pickle Flavors

There’s nothing wrong with going basic pickle juice, but once you’ve mastered it, there’s plenty of room to experiment. You can add jalapeño or chili flakes for a sweet-and-spicy version. For a winter snack, try ginger, cinnamon, and star anise. Mustard seeds, garlic, and bay leaves can push the flavor in a more savory direction. The world of spices is your oyster!

Toss It Into a Stir-Fry or Curry

Watermelon rind may technically come from a fruit, but it can be treated much like a vegetable. Peel the green skin, slice the white section into bite-sized pieces, and stir-fry it with carrots, broccoli, peppers, onions, or tofu.

Because the rind has a relatively neutral flavor, it loves to be pickled in soy sauce, garlic, ginger, sesame oil, and other seasonings without competing with them. Then all you need to do is add it to your curry, or simmer it with tofu, vegetables, and spices. Serve it over rice or another grain for an easy meal that turns scraps into something genuinely delicious and refreshing.
