Dill Pickle Pasta Salad
This hack isn’t too far off from a traditional dish, as most chicken salads already use relish. So why not use dill pickles instead? For this dish, mix shredded cooked chicken with chopped celery, mayonnaise, and diced pickles. Add in a splash of pickle juice, salt, pepper, and onion powder, with just a pinch of sugar. The pickle adds in a pleasing range of saltiness and acidity, giving the salad a more balanced, brighter flavor. It’s perfect on a cracker, piled onto toast, or in between a sandwich.
Fried Cheesy Pickle Chips
These are a low-carb twist on the crowd-pleaser fried pickles, and they are just as addictive. Dry a few pickle slices so that they will crisp properly. In a non-stick muffin tin, layer in shredded cheese and a pickle slice, topped with more cheese. Add crushed red pepper or ranch seasoning depending on your preference. Bake at 400 degrees for 20 minutes or so, or until golden and crispy around the edges. They should be crunchy on the outside, chewy in the center, and perfect for dunking into ranch dressing.
